Oxford Dictionary of English (Second Edition Reserved, Oxford University Press)によると、 “a long piece of wood or metal used for holding pieces of food, typically meat, together during cooking”とのことでした。
『ジーニアス英和辞典』（第五版，大修館）で調べたところ、「（料理用の木・金属製の）串，焼き串，串状のもの」と載っておりました。動詞では「…を串刺しする，…を酷評する」との定義がされておりました。
今回の記事では、 “skewers of chicken gristle”で焼き鳥のことを表しているのだと思います。
インターネットで画像検索をかけると、大きめのステンレス製の串の写真が沢山出てきます。BBQなどで使用するものだと思われます。skewerの指す串は焼き鳥の串とは少し違うのかなと思いました。（Gomez）
