The project -- "Sonic cheese: experience between sound and gastronomy" -- hopes to show that the power of music can influence the development, characteristics and even flavour of the cheese.

取り上げるのはgastronomy /ɡæˈstrɒnəmi/ です。文脈から「美味しさ」であると推測しました。
『ジーニアス英和辞典』(第五版、大修館書店)では「美食、美食学、(特定地域の)料理法」とあります。また、LDOCEでは “the art and science of cooking and eating good food” と定義されています。Oxford Living DictionariesをみるとEarly 19th century: from French gastronomie, from Greek gastronomia, alteration of gastrologia (see gastro-, -logy).と由来が載っていました。
音楽と発酵の関係は実に面白いものです。調べた中では、鰹節とモーツァルトのかけ合わせがありました。心地よいクラシックは工場の中にいる人間はもちろん、微生物をも癒すのかもしれません。(seventh-dan)
