chuck / tʃʌk / とは, 牛のどの部位であるのか『リーダーズ英和中辞典』(研究社)で調べたところ, 「首回りの肉」とありました。また口語では「食事」を指す場合もあるようです。The Free Dictionary.comには “a cut of beef extending from the neck to the ribs and including the shoulder blade” と定義されていました。同じく牛のむね肉は “brisket”, もも肉は “round” となります(同英和辞典)。ちなみにハワイ・ワイキキビーチ付近には “Chuck’s Steak House” というレストランが存在し, 米国農務省が認定したプライム・グレードのステーキが提供されているそうです(http://chuckshawaii.com/index.html)。(Cayu)
