Researchers: Monkeys more sensitive to sweets than man

Japanese macaques have a palate so sensitive to sweet tastes that faint sweetness that is imperceptible to humans may be to monkeys what sugar is to humans, said a team of researchers from Kyoto University’s Primate Research Institute.

Hiroo Imai, an associate professor of molecular biology with the institute, and his colleagues said their finding could, for example, help discover new sweeteners if it were to be applied to technologies for measuring sweetness.

The research results were published Dec. 16 in Scientific Reports, a British science journal.

今回取り上げる表現はpalate /ˈpælət/ です。以前英検プリントでも出てきましたが、『ライトハウス英和辞典』（第5版　研究社）には「1（the〜）（解剖）口蓋（こうがい）　the hard（soft） palate 硬（軟）口蓋　2（普通は単数形で）（格式）味覚（for）」とありました。LDOCEには “the roof (=top inside part) of your mouth” や “the sense of taste, and especially your ability to enjoy or judge food” と定義されております。

今回は “a palate” と単数形になっており、「味覚」の意味で用いられています。
ヒトはショ糖（砂糖）や果物などに含まれる果糖を最も甘いと感じ、麦芽糖にはあまり甘さを感じませんが、ニホンザルは麦芽糖の甘みをショ糖と同じくらいの強さで感じることができるそうです。
