Chukaman: Chewy takeout from Chinatown

Every year about 20 million people visit Yokohama’s Chinatown. A casual food popular among those visitors is chuka manju or Chinese-style steamed buns stuffed with minced pork or red bean paste.
Known as chukaman, they can be taken home after dining out at a Chinese restaurant or as a snack to munch on while strolling along the street.
Chukaman are said to have originated during China’s Three Kingdoms period in the third century when the statesman Zhuge Kongming ordered a chef to cook them.
Yokohama Chinatown was established by Chinese residents acting as mediators between Japanese and Westerners who visited Japan after Yokohama Port opened in 1859. Chukaman were apparently offered at Chinese restaurants back then.

今回取り上げるのは、“chewy”という単語です。この表現は、「よくかんで食べる」を意味する動詞“chew”の形容詞形です。LDOCEで調べてみると、“food that is chewy has to be chewed a lot before it is soft enough to swallow”という定義が載っていました。さらに『ジーニアス英和辞典G4 大修館書店』には、「よく噛む必要のある、かみごたえのある」という意味がありました。あまりこれらの意味からだけではおいしそうなイメージがあまり伝わってきませんが、この記事では「もちもちとした食感」を表しています。また、麺類の食べ物であれば「もっちりとしてコシがある」と表せます。(ninetails)
