roof（屋根）には「最高部, 頂, てっぺん」という意味もあります（『プログレッシブ英和中辞典』小学館）。そこからきた表現で，go through the roofで「〈価格などが〉急騰する」を意味します。
ちなみにgo through the roofには「頭にくる, かっとなる」という意味もあり，hit the roofも同じ意味でよく用いられます。（院生 小山本）
