Two people on wooden pontoons cleave their way through a carpet of junsai, or water shield, to pick the young shoots out of the water in Mitane, Akita Prefecture, on Friday. The town is known as the nation’s largest producer of the waterweed, which is in the Nymphaeaceae family.
