今回はkojic (acid)をとりあげます。『新英和大辞典』(第6版,研究社)で調べたところ、kojic acidで「こうじ酸」と載っておりました。
またインターネットで調べたところ、"By-product of the fermentation process of malting rice for use in the manufacture of sake, Japanese rice wine.
