"tap into"を取り上げます。『ジーニアス英和辞典(大修館書店)』によると「必要なものを利用する」とありました。ここでは、tapping into a taste for more soboku (rough, artisan) productsとなっているので「味を引き出す」という意味になるかと思いました。(lua)
