glassy-eyed hour

(Koyamamoto)

I had heard chefs waffle on about simplicity, and ‘letting the ingredients speak for themselves’, about how they only cook seasonal, local food, and so on – they all said the same thing. While conducting interviews for magazines and newspapers I had spent many a glassy-eyed hour listening to them drone on – but their fussy, complicated food invariably undermined the platitudes.
